Tamarind paste

You can get tamarind in a number of forms, or so I’ve read. I get it in brick form at the Asian grocery. Cut off about 3/8 of an inch, break that into a few pieces and set them in a small bowl of hot water for about 20 minutes. Stir that around and then strain it, reserving the liquid, discarding the leftover solids.
