Pizza with Spinach, Strawberries & Balsamic Onions

Teresa’s comment was “this is salad on a pizza,” which I have to admit was kind of the point.
I got some great kitchen loot for Christmas this year. One was a recipe book called New Flavors for Salads, which suggested, among other things, roasting strawberries. So I thought if you can roast strawberries for a salad, you can cook them on a pizza.
Another great piece of Christmas loot was a pizza stone. It makes a fantastic crust. I’ll never make another pizza without it. At least not until I win the lottery and install my wood-fired pizza oven.

Pizza with Spinach, Strawberries & Balsamic Onions

pizza dough or one pre-made pizza crust
1 medium yellow onion, sliced
3 tbsp olive oil, divided
between 1/3 – 1/2 cup balsamic vinegar
about 1-1/2 cups fresh spinach, loosely packed (don’t worry, it’ll condense during cooking)
maybe 5 medium strawberries, sliced
one or two cloves garlic, minced
about 2 tbsp slivered almonds
about 2 oz grated gruyere cheese

1. Balsamic onions: preheat oven to 450 degrees. Warm 1-1/2 tbsp olive oil in a large pan. Cook the onions slowly, over medium heat, until they’re limp, yellow, almost but not fully sauteed. Start adding balsamic vinegar at this point, about 3 tbsp at a time. Allow it to reduce and thicken, but keep the heat low and don’t allow it to scorch or burn. Keep adding balsamic until it’s all gone. Remove from heat just before the last of the balsamic has completely thickened. Save the onions and the remaining liquid.

2. If you’re using fresh pizza dough, roll out the crust and pre-cook it in the oven for about four minutes (I no longer do this with the pizza stone, but I’ll save that for another post). Remove from the oven. Brush with remaining olive oil, top with balsamic onions, spinach, strawberries, garlic, cheese and almonds. Drizzle over remaining balsamic from before. Cook for about 8 minutes, or until the top is bubbly and nicely starting to brown.

TIP: This might be good with some prosciutto.

    • I was in the mood to try something different. I thought it was a nice change for Pizza Friday in our house. But try it and decide for yourself!
